Grasp the main body firmly with one hand using a kitchen towel for grip. Grip the base of each knuckle close to the body with your other hand, then twist and pull downward to cleanly detach both arms from the carapace.

Crack and Extract Claw Meat

Separate the knuckles from the claws by twisting at the joint. Bend the small bottom pincer claw sideways until the internal cartilage snaps, then gently pull it straight out. Place a seafood cracker across the widest part of the main claw, crack gently on both sides, and ease the intact claw meat out in one solid piece.

Separate and Extract the Tail

Hold the carapace in one hand and the tail in the other. Twist the tail 90 degrees and pull backward to detach it from the main body. Turn the tail belly-up, use kitchen shears to cut down both outer edges of the thin translucent underside membrane, peel the membrane back, and lift the entire solid tail meat free from the hard top shell.
