๐งฐ Required Tools & Equipment
- โ Sharp paring knife
- โ Flat cutting board
- โ 2 Matching wooden chopsticks (depth guides)
- โ Toothpicks
- โ Small bowl
๐ฆ Materials & Supplies
- โ 1 Large firm, unblemished apple (Granny Smith or Honeycrisp)
- โ 1 Lemon (juiced into 1 cup water for anti-browning dip)
- โ 2 Apple seeds (saved during cutting for eyes)
โ ๏ธ Safety Checkpoints & Warnings
- โข Always cut downward toward the cutting board or away from your holding fingers; never cut toward your palm.
- โข Ensure the apple base is completely flat and stable on the board before making precision wing cuts.
๐ Step-by-Step Guide (6 Steps)
Slice Apple Base and Establish Working Halves
Place the apple upright on the board. Make a vertical slice slightly off-center (about 1/3 of the apple off, keeping the stem and core mostly in the larger 2/3 piece). Place the larger piece flat-side down on the cutting board to serve as the swan body.
- โข Large apple portion rests completely stable and flat on the board without rocking.
- โข Smaller third of the apple is set aside intact for carving the head.
- โข Cutting directly through the center core, weakening the swan's body structure.
Set Depth Guides and Cut Outer Wing Wedges
Place one chopstick parallel on each side of the apple base. Make a vertical cut down the right side of the core until the blade hits the chopsticks, then make a horizontal cut from the side inward until the cuts meet to free an L-shaped wedge.
- โข A single, clean L-shaped apple wedge pops cleanly free from the right side of the body.
- โข A central ridge along the core remains uncut.
- โข Cutting through the central spine of the apple, disconnecting the body.
Carve Nested Wing Segments
Take the removed L-shaped wedge and place it cut-side down. Repeat the parallel vertical and horizontal cuts inward, using the chopsticks to carve 3 to 4 progressively smaller nested wedges. Repeat this entire process for the left wing.
- โข Both left and right sides have 3-5 cleanly separated, concentric L-shaped wedges.
- โข All cut edges are sharp, smooth, and free of jagged tears.
- โข Cutting wedges too thin, causing the delicate apple layers to snap.
Assemble and Fan Out the Wings
Nest the wedges back into their original cutout spaces on the main apple body. Gently slide each inner layer back by roughly 1/4 inch relative to the layer beneath it to create a stepped, fanned-out feather effect on both sides.
- โข Both wings display a symmetrical, stepped cascade sloping backward toward the tail.
- โข Wedges stay in place without falling off the body.
- โข Pulling the pieces out too far, causing the wing stack to collapse.
Carve Head Channel and Shape Swan Neck
Cut a small 1/2-inch rectangular notch into the top front of the swan body. Take the reserved 1/3 apple half, cut a flat 1/4-inch thick slice, and carve an S-curve neck with a pointed beak. Press two apple seeds into the sides of the head for eyes.
- โข A clear, curved swan neck profile with a pointed triangular beak is carved.
- โข Two apple seeds are firmly embedded flush on opposite sides of the head.
- โข Carving the neck too thick to fit into the body notch.
Mount the Head and Apply Anti-Browning Finish
Insert the base of the carved neck firmly into the front channel on the body, securing with half a toothpick hidden inside the slot if necessary. Brush or mist the entire swan thoroughly with lemon water to lock in moisture and prevent oxidation.
- โข Swan head stands upright and proud at the front of the body.
- โข Entire carved surface is glistening with a light coat of lemon water, remaining bright white.
- โข Leaving untreated apple flesh exposed to air, turning the swan brown within minutes.
