Scale and Gut the Fish
Hold the fish firmly by the tail over a sink or cutting board. Scrape firmly from tail to head using a scaler or spoon to remove all scales. Cut along the belly line from vent to gills, remove the entrails, and rinse the cavity thoroughly under cold running water.
