Position and Grip the Trout

Lay the trout belly-up on your cutting board with the head pointing away from your dominant hand. Grip the head or back firmly with your non-dominant hand using a damp paper towel to prevent slipping. Ensure your knife blade is razor sharp before making contact.

Slit the Belly from Vent to Throat

Insert only the tip of the knife into the anal vent with the blade facing up and away from the spine. Slice smoothly forward along the center of the belly toward the throat, stopping right between the pectoral fins. Keep the cut shallow so you open the skin and muscle without piercing the stomach or intestines.

Sever the Throat Connection

Make a crosswise cut through the chin cartilage where the gills connect to the lower jaw. Do not sever the fish's head off completely; only cut the bridge between the lower jaw and the gill arches. This releases the anchor point for the entire gill and organ package.

Use the tip of a small metal spoon to scrape out the dark coagulated kidney blood from head to tail until bare white bone shows.
