How to Clean and Cook Countryside Snails

Purge Grit and Mud
Place live snails into a large basin and submerge them in cold water. Add 2 sliced fresh chilies or 1 tablespoon of rice flour into the water to stimulate the snails to expel trapped mud. Let them soak undisturbed for 45 to 60 minutes, then discard any snails that float or remain completely motionless when touched.

Scrub Shells and Clip Tips
Scrub the outer surface of each snail shell under running water using a stiff bristle brush to remove moss and algae. Using heavy kitchen shears or the back of a small cleaver, snip off roughly 1/4 inch of the pointed tail end of each shell. This breaks the vacuum inside, allowing the meat to slide out easily during eating and letting seasonings penetrate.

Strip Slime with Salt and Acid

Rinse thoroughly in a colander under running water, repeating the salt scrub until the rinse water runs completely clear.

Parboil with Aromatics

Add the drained snails and toss vigorously for 2 minutes to coat with the aromatics.

Transfer to a serving platter and serve immediately with toothpicks or skewers.
