- โ 1 tablespoon chopped scallions
โ ๏ธ Safety Checkpoints & Warnings
- โข Ensure the ramekin and egg surface are completely dry to prevent hot oil splattering.

- โข Do not walk away from the stove while heating high-temperature oil.
๐ Step-by-Step Guide (6 Steps)
Crack Egg into Ramekin
Crack one large fresh egg into a small clean, completely dry ramekin instead of directly into the pan. Inspect the yolk to ensure it is centered and unbroken, and check that no shell fragments fell in.
- โข Intact, plump egg yolk sitting centered in clear egg white inside the ramekin with no shell pieces.
- โข Cracking directly into hot oil from high above, causing splatters.
- โข Using a wet ramekin which introduces water droplets to hot oil.
Preheat Pan and Oil
Place the skillet or wok over medium-high heat for 1 minute until hot. Pour in 2 tablespoons of neutral cooking oil and tilt the pan so the oil coats a 4-inch pooling area in the center.
- โข Shimmering oil with faint wisps of vapor rising gently from the center of the pan.
- โข Adding oil to a completely cold pan.
- โข Letting oil reach heavy smoking point before adding the egg.
Slip Egg Gently into Center
Bring the ramekin rim down to within 1 inch of the oil surface. Tip the ramekin smoothly to slide the egg into the center of the shimmering pool.
- โข Egg white immediately foams, turns opaque, and blisters with bubbles around the perimeter.
- โข Dropping the egg from several inches high, creating oil splashback.
- โข Moving or poking the egg immediately after it touches the oil.
Baste the Whites with Hot Oil
Tilt the pan slightly toward you so hot oil pools at the bottom edge. Use a spoon to scoop hot oil and drizzle it exclusively over the thick, uncooked egg whites around the yolk, avoiding direct contact with the yolk surface.
- โข Thick outer whites puff up into an opaque, golden-edged ruffle while yolk stays glossy orange.
- โข Dumping oil directly on top of the yolk, turning it opaque and rubbery.
- โข Flipping the egg over and puncturing the delicate yolk.
Season and Crisp Bottom
Lower heat to medium and allow the bottom to crisp for 20 to 30 seconds. Drizzle light soy sauce around the outer oil ring (not directly on the egg) and sprinkle chopped scallions onto the hot white.
- โข Underside edges show a distinct deep golden-brown, lacy crust while yolk jiggles freely.
- โข Pouring cold sauce directly over yolk, cooling down the center.
- โข Leaving heat on high, charring the bottom before whites fully set.
Transfer and Plate
Slide a thin spatula completely underneath the crispy base, tilting the pan slightly to drain excess oil. Transfer the egg cleanly onto a warm bowl of rice or serving plate.
- โข Egg rests on plate with a high-standing, glossy, wobbly orange yolk bordered by a golden, crunchy fringe.
- โข Lifting egg by only the edge, snapping the base and rupturing the yolk.
- โข Transferring pooling oil directly onto the serving plate.
