๐ Step-by-Step Guide (6 Steps)
Prep and Dry the Duck
Pat the duck breast completely dry on all sides using paper towels. Trim away any excess hanging flaps of skin or fat around the perimeter of the breast. Ensure the meat is completely free of surface moisture before scoring.

Score the Skin
Using the tip of a sharp knife, score the skin in a tight criss-cross or diamond pattern, cutting halfway through the fat layer. Be careful not to pierce through into the red meat below. Season both sides generously with sea salt and black pepper.

Start in a Cold Pan
Place the seasoned duck breast skin-side down into an unheated, dry skillet. Turn the heat to low-medium. Let the fat gently melt and render out slowly without burning the skin.

Render and Sear the Skin
Cook skin-side down for 6 to 8 minutes as fat pools around the meat. Tilt the pan periodically to ladle out excess liquid fat into a heat-safe bowl, leaving just a thin coating. Watch for the skin to turn deep golden-brown and crisp.

Flip and Baste
Flip the breast onto the flesh side. Add the crushed garlic cloves and fresh thyme sprigs into the remaining pan juices. Cook for 3 to 4 minutes while continuously spooning the hot aromatic fat over the crispy skin side.
