How to Sear Sea Scallops to Perfection

Remove the Side Muscle (Foot)
Examine the side of each scallop for the small, fibrous rectangular muscle tag. Pinch it firmly between your thumb and forefinger and peel it away from the scallop body. Discard the tough muscle fibers.

- โข Leaving the side muscle attached, resulting in a rubbery, chewy bite.
Thoroughly Dry the Scallops
Line a plate or tray with a double layer of paper towels and arrange the scallops flat on top. Press another paper towel firmly over the tops and sides to blot away all surface moisture. Leave them uncovered for 5 minutes on paper towels to ensure completely dry surfaces.

Preheat Pan and High-Smoke-Point Oil
Place a heavy skillet over medium-high heat and let it preheat dry for 2 to 3 minutes. Add 1 to 2 tablespoons of high-smoke-point oil and swirl to coat the entire bottom. Wait until the oil shimmers and produces wisps of faint white smoke.

Season and Place Scallops in the Pan
Generously season only the top side of the scallops with kosher salt right before cooking. Using tongs, place the scallops seasoned-side down into the hot oil in a clockwise pattern around the pan perimeter, leaving at least 1 inch of space between each. Season the exposed top sides with salt immediately after placement.

Sear Undisturbed for the Crust
