Scale and Dry the Fish
Place the whole fish flat on your cutting board and hold it firmly by the tail. Scrape the fish scaler or the dull back of a knife against the grain of the scales, moving from tail to head in short, firm strokes. Rinse thoroughly under cold running water to remove loose scales, then pat the entire fish dry inside and out with kitchen towels.
