๐ Step-by-Step Guide (5 Steps)
Weigh and Grind the Dose
Tare your scale with the empty portafilter or dosing cup. Weigh out precisely 18.0 grams of whole beans, transfer to the grinder, and grind into the portafilter basket. Verify the ground mass reads exactly 18.0g.

Distribute and Tamp the Puck
Stir the grounds thoroughly with a WDT tool to break up clumps and equalize density across the basket. Place the portafilter on a stable surface, rest the tamper level on top, and press down evenly with 20-30 lbs of force until the coffee bed resists further compression.

Evaluate Extraction Timing and Taste
Record the total extraction time required to reach 36g. Stir the espresso with a small spoon to blend layers, then sip and evaluate. Fast flow (under 20s) typically tastes sharp, sour, and watery (under-extracted); slow flow (over 35s) tastes harsh, bitter, dry, and astringent (over-extracted).

Purge a small amount of beans through the grinder to clear old settings, then repeat the 18g dose, tamp, and pull to verify the corrected 25-30 second extraction.
