Prepare Boiling Pot and Ice Bath
Fill a large stockpot two-thirds full of water, add 1/4 cup kosher salt, and bring to a rolling boil over high heat. Fill a large mixing bowl halfway with cold water and add ice cubes to create a deep chilling station.
