📋 Step-by-Step Guide (6 Steps)
Even out the chicken thickness
Place the chicken breast flat on the cutting board. Slice horizontally through the thickest half to create an even cutlet, or place plastic wrap over it and gently pound the thick end with a heavy pan until uniform in thickness.
- • Chicken breast has a uniform thickness of roughly 1/2 to 3/4 inch across the entire piece.
- • Leaving one end twice as thick as the other, leading to uneven cooking.
Dry and season the meat
Pat both sides of the cutlet thoroughly with paper towels until completely dry. Generously sprinkle kosher salt, black pepper, and garlic powder across both sides, pressing the spices gently into the surface.
