Locate the softest eye on each coconut and pierce it using a clean screwdriver or skewer to drain the water into a cup. Place the drained coconut on a folded kitchen towel, then firmly tap around the equator with the back of a heavy cleaver or mallet until the shell splits cleanly into halves.
