๐ Step-by-Step Guide (6 Steps)
Wash, Dry, and De-stem the Betel Leaves
Gently rinse fresh betel leaves under cold running water to remove any surface dust or debris. Pat each leaf completely dry with a clean cloth or paper towel, taking care not to tear the delicate tissue. Use kitchen shears or a paring knife to slice off the thick base stalk and slightly shave down the thickest part of the central spine on the matte underside.

Apply Katha and Slaked Lime Paste
Lay the leaf flat on your work surface with the dull, lighter-green underside facing upward. Dab a pinhead-sized dot of diluted slaked lime (chuna) and a dime-sized amount of katha paste onto the center of the leaf. Use the back of a small spoon to blend and spread the pastes outward into a thin, uniform circular wash.

Add the Gulkand Base Layer
Spoon one level teaspoon of thick gulkand (sweet rose petal preserve) directly onto the center of the katha-coated leaf. Gently spread it across the lower-middle third, creating a sticky anchor bed for the dry toppings. If using sweet paan chutney or menthol drops, dab a tiny droplet directly into the gulkand.

Layer Dry Fillings and Textural Elements

Add chopped glazed cherries or silvered dates according to personal preference. Press the dry ingredients lightly into the sticky gulkand so they settle into a compact mound.

Fold the Leaf into a Triangle (Gilouri)

Fold the remaining top pointed flap downward over the open top of the triangle to seal the envelope completely.

Pin with a Clove and Garnish
Take a whole clove stem and gently push it through the overlapping flap near the top center of the triangle to lock the parcel in place. Serve immediately or chill briefly before serving as an after-meal palate cleanser.
