How to Make Sponge Ice

๐ Step-by-Step Guide (6 Steps)
Bloom the Gelatin Base
Pour 60ml of cold water into your heatproof mixing bowl and sprinkle the gelatin powder evenly over the surface. Let the mixture sit undisturbed for 5 to 7 minutes to fully hydrate. The powder will absorb all liquid and turn into a thick, wrinkled gel mass.

Dissolve and Sweeten with Hot Water
Pour 120ml of freshly boiled water directly over the bloomed gelatin mass. Add the sugar and stir steadily with a spatula or spoon for 1 to 2 minutes until every grain of sugar and gelatin is completely dissolved into a clear, golden syrup. Add a drop of food coloring now if desired.

Whip into a Dense Sponge Foam
Submerge the electric hand mixer beaters into the warm liquid and start on low speed to avoid splattering. Gradually increase to the highest speed and whip continuously for 6 to 10 minutes. The mixture will expand significantly, turning from a flat syrup into an opaque, glossy, meringue-like foam that holds soft peaks.

Pipe or Spread Foam into Molds
Work quickly before the gelatin foam begins to set at room temperature. Use a rubber spatula to scoop the fluffy white foam into clean silicone ice molds, pressing lightly to fill corners and eliminate large air voids. Smooth the tops flush with the edge of the mold using the flat side of the spatula.

Freeze to Solidify Cellular Structure
Carefully transfer the loaded mold on its tray into the coldest section of your freezer. Freeze undisturbed for at least 4 hours, or ideally overnight, until the water locked inside the aerated gelatin matrix completely freezes into rigid micro-crystals.

Unmold and Serve
Gently press the bottom of each silicone cavity upward to pop out the sponge ice cubes. Drop them immediately into iced tea, soda, or cold coffee; the sponge-like cellular structure absorbs the liquid while floating lightly and providing a uniquely soft, chewable icy texture.
