Chill and Stage the Chocolate Bar
Place the chocolate bar in the refrigerator for 10-15 minutes so it is firm enough to cut cleanly without melting or snapping irregularly. Lay a sheet of parchment paper over your cutting board and place the unwrapped chocolate bar face-up with its grid clearly visible.

Heat and Dry the Knife Blade
