โš ๏ธ Safety Checkpoints & Warnings

๐Ÿ“‹ Step-by-Step Guide (6 Steps)

1

Scale and Rinse the Salmon

Place the salmon flat on the cutting board. Scrape from the tail toward the head using short, firm strokes with a scaler or the back of a knife to remove loose scales. Rinse the fish with cold water and pat completely dry with paper towels to improve knife grip.

๐Ÿ‘๏ธ Camera AI Checkpoint
  • โ€ข Skin surface appears smooth and matte with no loose, shiny scale clusters.
  • โ€ข Fish skin is dry to the touch with no excess surface slime.
๐Ÿ›‘ Watch Out For
  • โ€ข Scaling toward the tail instead of against the grain toward the head.
  • โ€ข Leaving the skin wet, making the fish slick and dangerous to hold.
โš ๏ธ Safety Note: Do not use a sharp blade edge for scaling to avoid accidental slips.
2

Open the Belly and Eviscerate

Insert only the tip of the fillet knife into the vent near the tail. Slice shallowly along the centerline up to the base of the gills, taking care not to puncture the intestines. Reach in with your fingers and pull out all internal organs in one smooth motion.

๐Ÿ‘๏ธ Camera AI Checkpoint
  • โ€ข A continuous straight slit running from the vent to the throat.
  • โ€ข Abdominal cavity is empty with the dark bloodline along the spine exposed.
๐Ÿ›‘ Watch Out For
  • โ€ข Inserting the knife too deep and slicing into the stomach or gall bladder.
  • โ€ข Tearing the delicate belly meat while pulling the viscera.
โš ๏ธ Safety Note: Angle the knife blade shallowly upward toward the skin to avoid stabbing the internal organs or your fingers.
3

Make the Pectoral Collar Cut

Lift the pectoral fin and angle your knife blade at 45 degrees toward the head. Cut down through the flesh until the blade contacts the spine, without cutting through the backbone itself. Flip the fish and repeat the exact angle on the opposite side.

๐Ÿ‘๏ธ Camera AI Checkpoint
  • โ€ข Angled diagonal cuts behind the gills on both sides meeting at the top of the head.
  • โ€ข Knife edge resting against the central spine bone without severing it.
๐Ÿ›‘ Watch Out For
  • โ€ข Cutting straight down at 90 degrees, leaving valuable neck meat on the head.
  • โ€ข Severing the spine entirely before filleting the sides.
โš ๏ธ Safety Note: Anchor the fish by gripping the top of the head firmly with your gloved hand.
4

Remove the Top Fillet

Turn the knife flat against the backbone at the head cut. Using smooth, full-length slicing strokes, glide the blade along the top of the ribs down toward the tail, letting the spine guide the flat of your knife. Separate the entire top fillet from the frame.

๐Ÿ‘๏ธ Camera AI Checkpoint
  • โ€ข One full, clean fillet lying skin-down with smooth meat surface.
  • โ€ข Exposed backbone on the frame with minimal pink flesh remaining on the ribs.
๐Ÿ›‘ Watch Out For
  • โ€ข Sawing back and forth aggressively, causing ragged meat edges.
  • โ€ข Angling the blade upward and cutting through the fillet meat prematurely.
โš ๏ธ Safety Note: Keep your non-dominant hand flat on top of the fillet behind the cutting edge, never in front of the blade.
5

Remove the Bottom Fillet

Flip the remaining frame over or keep the carcass stationary and insert the knife just above the backbone at the tail. Slice forward along the spine toward the head collar, lifting the frame slightly with your free hand to maintain clear visibility of the bone structure.

๐Ÿ‘๏ธ Camera AI Checkpoint
  • โ€ข Second intact fillet freed cleanly from the frame.
  • โ€ข Clean, translucent rib cage structure visible with negligible meat residue.
๐Ÿ›‘ Watch Out For
  • โ€ข Lifting the spine too aggressively, bending the spine and forcing the knife into the meat.
  • โ€ข Losing the line of the backbone near the tail section.
โš ๏ธ Safety Note: Ensure the board remains dry to prevent the carcass from shifting unexpectedly during the forward cut.
6

Trim Rib Bones and Pin Bones

Lay each fillet skin-down. Slide your knife just under the thin rib cage membrane and slice forward to shave the rib bones off in one thin sheet. Run your fingertips down the centerline to locate pin bones, then extract each one cleanly in the direction the bone points using tweezers.

๐Ÿ‘๏ธ Camera AI Checkpoint
  • โ€ข Belly flap is smooth and completely free of rib bones.
  • โ€ข Centerline of the fillet is completely smooth with zero protruding pin bone tips felt.
๐Ÿ›‘ Watch Out For
  • โ€ข Pulling pin bones straight up or backward, tearing the delicate fillet flesh.
  • โ€ข Shaving off too much belly meat when removing the rib cage.
โš ๏ธ Safety Note: Keep fingertips curved back when feeling for sharp pin bones along the flesh.
